Service

All employees and owners of a licensed establishment must haveî Smart Serve Training

All of the same rules apply to B.Y.O.W as they do to regular liquor service.

Please ensure you always use your smart serve training.


Customer Etiquette

A consumer choosing to B.Y.O.W. at participating restaurants in most cases is looking for and expecting a special experience.

They may have been saving a bottle of wine for a special occasion or have done some very intricate work on choosing just the right bottle for that occasion.

Please make sure your establishment has the appropriate White and Red wine glasses to enhance the consumerís experience.

It is suggested that when the customer arrives and announces they are B.Y.O.W that the server should accept their bottle or bottles and place them in a serving area.

The customers should then be seated and menuís presented, and then the wine should be brought to the table for service.

It is always a good idea that food be eaten when consuming any type of alcoholic beverage.

If the wine is white, it may be a good idea to store it in an ice bucket to ensure correct serving temperature.

Suggestions on Serving

The server may also want to ask questions about the wine, this not only allows the server to answer food selection questions more appropriately, but it also engages the customers and shows acceptance that the establishment is happy about participating in B.Y.O.W.

The customer before having their wine may want to order a cocktail; this would also allow your server to make a suggestion based on the wine brought to the establishment.

If more than one bottle is brought in by the customer, the server should ask if they have a preference as to which bottle should be opened first.

Perhaps the customer will want to start with a White wine with the appetizer and then a Red wine for the main course.

Donít forget, if you switch wines, it is a good idea to change glasses, or at the very least ask the customer if they would like you too.


Upon finishing the bottle of wine, the customer may also want to order an additional glass form the menu.

If the server is asked for a recommendation, it will help if they ask the customer more about the wine that they have just finished.

It is always a good idea to ask the customers what their usual preferences are, such as Merlot or Cabernet.

At the completion of the meal the server should ask the customer how they enjoyed their wine service; this will allow the customer to make suggestions that may help your server for their next visit.

This will also let your customer know your establishment really cares about B.Y.O.W., great wine and most of all great customer service.

After all B.Y.O.W. is about the consumer having a wonderful experience at your establishment and having them come back again with another great bottle of wine.
